Curry in a Hurry!

I don't have any regrets about my life to date, I do think I might have made some better choices if I knew then what I do now.
Most of these are to do with my chosen career I've always been in a retail environment but had the chance on leaving school to join the RAF it was a join now or finish college and re-apply later choice I chose the latter and that was passed by.
To this day I still think my preferred choice would have been as a chef I love to cook and love cooking for people, there is very little that compares to seeing smiling faces and sounds of contentment as people tuck into your food.

Here's a really Easy simple Thai Fish Curry for 2

Ingredients:
2 pieces of frozen Coley
4 Teaspoons of Thai Red Curry Paste (Barts is best)
1 Red Pepper
6 Baby corn
A handful of French Beans
1 tin of Coconut Milk
Juice of 1 Lemon
2 handfuls of Rice

Method:
  1. Empty the Coconut milk into a large pan / wok
  2. Thinly slice the red pepper
  3. Chop the baby corn into fingernail sized chunks
  4. Cut the French beans in half
  5. Bring the coconut milk to the boil and add all the vegetables and reduce to a simmer
  6. Place the rice in a pan just cover with boiling water and boil for 5 minutes
  7. Place the coley fillets in a microwaveable bowl and squeeze over juice of the lemon, cover and heat on full for 3 minutes.
  8. Turn the fillets and cook for a further 2 minutes.
  9. Add more liquid to the rice if needed and cook for a further 5 minutes.
  10. Remove the fillets from the bowl discard the lemon juice and add the fish roughly chopped to the pan with the coconut milk and vegetables, cook for a further 2 minutes.

Serve and enjoy!!!
